Who we are?

We are Derby’s local brewer with an award winning beer across every Beer Style & numerous industry awards for our business acumen. We are a family run craft business with over 25 years brewing expertise in producing handcrafted premium real ales. We see a growing pub estate as a crucial part of our growth plans, having purchased & fully renovated our first pub The Brewery Tap, Derby’s Royal Standard, for which we received Derby CAMRA city pub of the year 2009, a civic award for the restoration project & most recently voted ‘Best Pub’ at the 2011 Derby Food and Drink Awards. We have also purchased and renovated our second pub The Greyhound pub in Friar Gate, Derby. Located on the opposite side of the City the Greyhound is an iconic Derby pub, found in the heart of Derby’s bustling City Centre. The Greyhound has also been a great success nominated as best newcomer in the 2010 Derby’s Food & Drink awards, received a civic award for our restoration project & recently been shortlisted for ‘Best Pub’ at the 2012 Derby Food & Drink Awards.

In addition to our two successful city centre pubs we have recently acquired and fully renovated The Queens Head, Little Eaton, creating a fantastic hub of the village, offering customers our usual range of award winning real ales across 8 hand pulls, draught and bottled beers, ciders, wines and spirits from around the world, plus fantastic locally sourced home made food. The Queens Head has also been shortlisted for ‘Best out of town’ at the 2012 Derby Food & Drink Awards in its first year of trading.

We will look to continue to grow our pub estate and plan to open a fourth site in 2014, as such we hope to offer great progression opportunities to the right candidates.

Across all our pubs we are passionate about food and only produce & sell fresh, homemade food, which is made from scratch using the finest locally sourced ingredients.

The role

As the chef of The Queens Head, you will be responsible for all aspects of the day to day running of any successful kitchen including prepping, cleaning down, ordering, receiving deliveries, cooking the menu, helping create new dishes, meal costing & setting kitchen procedures in place. In addition you will be involved in helping deciding the strategic direction of the site in conjunction with The Head Chef, Management team of the pub & company directors.

Who are we looking for?

An experienced organised chef who is enthusiastic & passionate about what they do. A hard working, committed individual with attention to detail, who thrives in a busy business, with a real passion for fresh home made food. A people person with good communication skills, who can work as part of a team & work using their own initiative, a good sense of humour is essential.

Responsibilities of the role

Day to day running & input into strategic direction of the business as part of the kitchen team, using initiative to ensure the business meets its full potential. An applicant must always embody the standards of the outlet at all times. You will also be responsible for helping to create new dishes and menus which will need to be fully costed, this will be done in conjunction with the head chef, the site manager and company directors. In addition it is important that you feel comfortable working in a team and helping to develop staff which report into you. Finally IT literacy & being comfortable dealing with customers are both fundamental to the role.

Skills

Experience in all areas of running a kitchen including menu design, menu costing, food hygiene, good time keeping and ideally a food hygiene certificate, although training would be provided. The ability to work during busy service, working quickly whilst maintaining high quality standards of food and good time keeping is essential.

Hours of work

Due to the nature of the business the candidate must be flexible in terms of hours which will include weekend work.
