Who are we? We are Derby’s local brewer with an award winning beer across every beer style and numerous industry awards for our business acumen. We are a family run business with over 25 years brewing expertise in producing handcrafted premium real ales. We see a growing pub estate as a crucial part of our growth plans, having purchased and fully renovated our first pub The Brewery Tap, Derby’s Royal Standard, for which we received Derby CAMRA city pub of the year 2009 & a civic award for the restoration project. We have also purchased and renovated our second pub The Greyhound pub in Friar Gate, Derby. Located on the opposite side of the City the Greyhound is an iconic Derby pub, found in the heart of Derby’s bustling City Centre. The Greyhound has also been a great success nominated as best newcomer in Derby’s Food & Drink awards and has recently received a civic award for our restoration project. In addition to our two successful city centre pubs we have recently acquired The Queens Head, Little Eaton. We are carrying out a full renovation of the pub, we are looking to create a fantastic hub of the village, offering customers a the usual range of award winning real ales across 8 hand pulls, draught and bottled beers, ciders, wines and spirits from around the world, plus locally sourced home made food. We will look to continue to grow our pub estate and plan to open a fourth site in 2012, as such we hope to offer great progression opportunities to the right candidates. Across all our pubs we only produce fresh, homemade food made on site each day. The role As assistant chef, you will be working with our head chef to form part of the kitchen team, aiding our head chef in all aspects of the day to day running of any successful kitchen including prepping, cleaning down, ordering, receiving deliveries, cooking the menu, helping create new dishes, meal costing and setting kitchen procedures in place. Who are we looking for? An experienced organised chef who is enthusiastic and passionate about what they do. A hard working, committed individual with attention to detail. Someone who thrives in a busy business with a real passion for fresh home made food. A people person with good communication skills, who can work as part of a team and work using their own initiative, a good sense of humour is essential. Responsibilities of the role As a member of our kitchen team you will be expected to carry out the role to the best of your ability everyday always maintaining the spirit of our team. You will have an involvement in creating new dishes for the menu & should be able to run the kitchen in the head chef’s absence following training. Finally it is important that you are comfortable dealing with customers when required and be IT literate. Skills Experience in all areas of running a kitchen including menu design, menu costing, food hygiene, good time keeping and ideally a food hygiene certificate, although training would be provided. The ability to work during busy service, working quickly whilst maintaining high quality standards of food and good time keeping is essential. Hours of work Due to the nature of the business the candidate must be flexible in terms of hours which will include weekend work. Benefits & Package The salary for this role is competitive.
